Hi Freida,

The pancakes in the second picture (the thinner ones) are the recipe from veganyumyum! I did not make any changes. The third picture is the recipe I posted! :) Hopefully that helps!

did you make the pancakes in picture #2? if so, can i please have the recipe? i clicked your link to veganyumyum but their picture of their pancake did not look as good as what you have here. did you make any changes to their recipe? i'm pregnant and really craving for thin pancakes and i'm trying to look for a good recipe. my co-worker made some before that were really good but she lost her recipe from a fire. thank you.

Congrats on pancake success. My absolute favorite new way to make vegan pancakes is using live sourdough starter. Once you have a starter going, you can just mix a cup of starter with 1 c flour + 1 c water the night before pancakes, then in the morning, add some sugar, soymilk, vanilla, a couple tbsp of flour as needed, and a little salt (I also usually add nuts, banana slices, and coconut). Then, right before cooking, mix 1 tsp or so of baking soda with 1 tbsp water, then mix into the batter. It's MAGIC. So much lift and bubbling and foam and it will make the lightest, tastiest, fluffiest pancakes ever with no mysterious egg replacer business. (I've given up on Ener-G as I find it rarely results in a great texture.) Also, you can replace some of the AP unbleached flour with whole wheat.

Hey, great blog! I see you made it to Austin. I just saw your post about creating an Austin Vegan Guide over on the VRA, and I posted about it myself, as well as on our collective Texas vegan blog, Lone Star Plate (http://lonestarplate.blogspot.com). We'd love to have you as a contributor there, as well.

Bienvenidos!
