					<description>Congrats on pancake success.  My absolute favorite new way to make vegan pancakes is using live sourdough starter.  Once you have a starter going, you can just mix a cup of starter with 1 c flour + 1 c water the night before pancakes, then in the morning, add some sugar, soymilk, vanilla, a couple tbsp of flour as needed, and a little salt (I also usually add nuts, banana slices, and coconut).  Then, right before cooking, mix 1 tsp or so of baking soda with 1 tbsp water, then mix into the batter.  It's MAGIC.  So much lift and bubbling and foam and it will make the lightest, tastiest, fluffiest pancakes ever with no mysterious egg replacer business.  (I've given up on Ener-G as I find it rarely results in a great texture.)  Also, you can replace some of the AP unbleached flour with whole wheat.</description>
